Laboratory
The first floor is the location of the Laboratory where the wines are analysed and monitored in continuation to guarantee top levels of quality. Work begins with the monitoring of the grapes to determine the ripening curves and therefore decide the right moment for picking. Then the musts are analysed both from the microbiological and technological points of view so that the fermentation phase can be managed in the best way possible. The refinement of the wines is then supervised throughout the storage and aging in the wood phase.
